Tell us about your culinary journey.
I”ve lived and worked in several different countries teaching cooking, taking cooking classes and workshops, and sharing food with friends and family. From each part of the world, I’ve collected treasures of taste and passion to share. I rolled that into my dream project here in Portland, which was starting my own snacking company, Parlo! Parlo was started (and named for) my boys, Parker and Arlo, and also happens to be a ‘tip of the hat’ to our time spend living in Italy, as parlo also means ‘I speak.’ I wanted something better than I was finding in the stores for snacks for my boys, so I brought them into the kitchen with me, handed them the ingredients, and together we blended our 1st batch of Parlo!

Where do you source your ingredients?
As locally as possible– I’m most proud of the fact that the delicious hazelnuts in my snack mixes come from a mere 30 miles away!
Tell us about a new product you are working on.
A whole 30 snack blend…slow roasted & toasted cashews, coconut, and cranberries, tossed with beautiful spices and herbs. There will also be a holiday variation on that theme with pistachios as well and a touch of maple syrup.
What will our fans find at your booth this fall?
3 different snack mixes; all for different moods. My classic snack mix is flavored with ginger and cinnamon; my holiday blend is cardamom, clove, orange, and apple; my happiest hour blend is rosemary, fennel, old bay, chili and plantains.
What’s the best part of your job?
Hearing my customers say ‘mmmmmmmmmmmmmmm’ as they enjoy their Parlo snacking experience!!!!!!!!!!!
