Willi Galloway: Veggies for Breakfast and Grow Cook Eat

I am a vegetable gardener, writer, and recipe developer who lives in Southeast Portland. I’ve written two books! My culinary gardening guide called Grow Cook Eat: A Food-Lover’s Guide to Vegetable Gardening, which just came out in its second edition in February. My new cookbook, Veggies for Breakfast: 100 Delicious Plant-Focused Recipes for Healthier Mornings comes out on October 28th! My favorite new variety that I tried this year was ’Trionofo Violetto’, a lovely and super productive pole bean.

What made you fall in love with gardening?

My mom! When I was little my mom had a HUGE vegetable garden in our backyard in Cheyenne, Wyoming. I loved being out in the garden, picking snap peas off the vine and searching for ripe strawberries. When I graduated college with an English degree and wanted to work in publishing, she suggested I apply for an internship at Organic Gardening magazine. I got the job and that launched my somewhat random career as a garden writer!

What are some of your favorite recipes in your new book, Veggies for Breakfast?
I love the whipped ricotta toasts because they make breakfast so easy. On the weekend, you can make up a batch of whipped ricotta and all you have to do for breakfast is spread it on some toast and top it with leftover veggies from dinner the night before. It’s so delicious and so fast!
For someone that is still new to gardening, what advice would you give for a newbie?
Start by growing some herbs! It’s so nice to just go snip off a few sprigs of thyme instead of buying a clamshell of thyme with more than you need. Plus, a 4-inch pot of herbs costs pretty much the same as a plastic clamshell, so it’s not a huge loss if you accidentally kill them.
